Chickpea Chia Peanut Butter Tahini Blondies

We're swooning over these blondies from our friend Eating with Abbs! Not to mention, they're easy to make with ingredients you probably already have in your kitchen!

 

-1/8 tsp cinnamon

-1/8 tsp cardamom

-1/2 T Heartland chia seeds

-1/8 + 1/4 tsp baking soda

-1/8 + 1/4 tsp baking powder

-1/2 cup peanut butter (or any nut butter)

-1 Tbs tahini

-1/3 cup maple syrup

-1 Tbs honey

-1 pinch pink Himalayan salt crystals

-1/3 cup chocolate bar, chopped in chunks

 

 

Preheat oven to 350 degrees. Combine all ingredients in food processor. Mix in chocolate chunks by hand. Spread mixture into greased pan or pan lined with parchment paper. Bake for 25 minutes or until golden brown. Enjoy!

Let us know what you think of this recipe, we know we love it! -2 large eggs -3 medium overripe bananas, mashed -1 cup canned pumpkin -1 1/2 cups skim milk -2 Tbs melted butter -1 tsp vanilla extract -2 1/2 cups old fashioned oats -1 1/2 tsp pumpkin pie spice -1/2 tsp nutmeg -2 dashes cardamom -1/2 tsp cinnamon -1 tsp baking powder -1 Tbs Heartland Chia seeds -1/2 cup maple walnuts -1/2 cup dark chocolate chips or chunks Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick cooing spray. In a medium/large bowl, mix together eggs, mashed banana, pumpkin, milk, butter, and vanilla extract until combined. Next, add oats, pumpkin pie spice, nutmeg, cardamom, cinnamon, baking powder, and Heartland Chia seeds until well combined. Lastly sprinkle on walnuts and dark chocolate chips. Lightly press into the oatmeal "batter." Pour mixture into prepared pan and bake for 25 minutes until edges start to become slightly golden brown, or until toothpick comes out clean. Serve warm, and store in the refrigerator!

    Replace your usual poppyseed ingredient with USA-grown chia seeds from Heartland Chia! Chia adds extra healthy fats (omega-3’s), fiber, and protein to this muffin which can help you stay satisfied until your next meal or snack. We hope this recipe eases your early morning routine! Wet Ingredients: 4 Tbs salted, softened butter 3/4 cup sugar 2 eggs 1 tsp vanilla extract 3/4 cup plain Greek whole milk yogurt 1/2 cup blueberries, rinsed 1 1/2 Tbs lemon juice Zest of 2 lemons (3rd lemon used for icing) Dry Ingredients: 1 1/3 cups flour 1/2 tsp baking soda 1/2 tsp salt 1 Tbs Heartland Chia seeds Icing: 1/4 cup lemon juice 1/2 cup powdered sugar Zest of 1 lemon Preheat oven to 375 degrees F. Using an electric mixer, cream together butter, sugar, eggs, vanilla extract, lemon zest, lemon juice, and greek yogurt. Add dry ingredients to wet ingredients, fold-in to combine. Do not over-mix. Add 1 Tbs Heartland chia seeds + 1/2 cups blueberries and mix until evenly dispersed into batter. Using all of the batter, evenly divide into 12 muffin tins. Bake for 17-18 minutes or until golden brown. While muffins are cooling, prepare icing. Add powdered sugar to lemon juice until desired consistency. Drizzle icing on cooled muffins. Sprinkle with lemon zest and serve.
